
Happy Independence Day, Friends!
As you can see, I've slowed down my posting schedule for the summer. I'll check in periodically, and have promised a reader that I will post photos and descriptions of my Author's Mini-Office soon, so be sure to bookmark this site, and you'll receive updates automatically when I submit new posts.... Now for the fun stuff....
Before we had kids of our own, my husband and I started a tradition of serving Fourth of July pancakes when we had some friends who had young children visiting over the 4th. It's an easy and fun way to celebrate.

Fourth of July Pancakes

*Make pancakes or waffles (Or, if you're in a hurry, you can do a large batch of frozen, store-bought or made-ahead pancakes on a cookie sheet in the oven.)
*Top with red, white and blue: strawberries, blueberries or blueberry syrup and whipped cream.
*For a treat, make homemade whipped cream: Beat 1/2 cup heavy whipping cream and 1 tablespoon granulated or powdered sugar (we prefer powdered, and sometimes add a little extra) in CHILLED bowl until stiff; this takes just a few minutes. Makes 1 cup of whipped cream. (From Betty Crocker) Of course, you can also flavor or color your whipped topping, and if you don't have time to make it from scratch, it's always fun to squirt it from a can!

Great to hear from you! My mother-in-law has a heart-shaped waffle iron, and I always thought it would be fun to use it for this breakfast.
You could always do it on July 5th or 6th! :) Or next year.
